Simple Suppers┃Toad in the Hole

Serves 4

  • 1 cup eggs (approx. 4)
  • 1 cup Plain Flour
  • 1 cup of milk
  • 1tbsp Wholegrain Mustard
  • 6 Sausages
  • 2tbsp rapeseed oil
  • 2 white onions – Finely sliced into strips
  • 1 tbsp olive oil
  • 75ml red wine
  • 3-4 sprigs fresh thyme
  • 4 dessert spoons bisto granules
  • 450ml water
  • 1 tea spoon of dijon mustard
  • 1 tea spoon of Red Currant Jelly

  • 150g Fetta Cheese
  • 200g Hazelnuts
  • 4 handfuls of wild Garlic
  • 40ml Olive Oil
  • 40ml Rapeseed Oil
  • Juice of 1/2 a Lemon
  • Salt & Pepper

Kedgeree

Something yummy to fill that strange gap between breakfast and lunch on a Sunday morning: Brunch

  • 250g Smoked Haddock Fillets
  • 2 Bay Leaves
  • 200g/7oz Basmati Rice, rinsed in cold water and drained
  • 3 Free-Range Eggs
  • 70g/3½oz Frozen Peas (optional)
  • 40g/1½oz Butter
  • 1 Onion, finely chopped
  • 1 tsp Turmeric
  • 2 tsp Garam masala
  • 3 tbsp Double Cream
  • Handful chopped Parsley & Chives
  • ½ Lemon, juice only
  • Freshly ground Black Pepper

Simple Suppers┃Thai Green Chicken Curry

Polly’s favourite meal in the whole world. A tastebud sensation! A gentle fusion of creamy crunchy spicy goodness.

  • 2 tbsp veg oil
  • 40g blue dragon thai green curry paste
  • 1 tin coconut milk
  • 390g Chicken Breasts (sliced into 1cm thick strips)
  • 1 tsp of salt
  • 2 tsp sugar
  • 50ml water
  • 1 tsp peanut butter
  • 115g baby corn
  • 115g bean sprouts
  • 75g mange tout
  • 1 yellow pepper (julienned)
  • 1 carrot
  • 1tbsp fish sauce
  • 1 red chilli
  • 1 generous handful of fresh coriander
  • juice of 1/2 a fresh lime

Simple Suppers | Teriyaki Salmon & Asian Stir-fry

Rustle up a healthy, quick and simple family favourite with an Asian twist!

  • 4x 100-150g Salmon Fillets
  • 1 tbsp Honey
  • 1 tbsp Soy Sauce
  • 2cm pice of ginger, finely chopped
  • 2 cloves of garlic, crushed
  • 280g Dried egg Noodles
  • 1tbsp sesame oil
  • 1tbsp Veg Oil
  • 2 cm Ginger
  • 1/2 fresh Chili
  • 2 cloves of crushed garlic
  • 1 carrot (cut into match sticks)
  • 100g sugar snap peas or Mange Tout
  • 1 pepper, sliced into strips
  • 85g bean sprouts
  • 2 Tbsp soy sauce
  • Handful of fresh coriander
  • 2 tbsp sesame seeds

These are the best Scotch Eggs, packed full of flavour with an ooozy middle. Just delicious.

  • 2 shallots
  • a few sprigs of thyme
  • black pudding
  • 300g sausage meat
  • 2 garlic cloves

  • Panko breadcrumbs
  • flour
  • 1 Ltr of oil (for frying)

The Ultimate Burger

Another simple supper and Friday night feast!

  • 500g Beef Mince
  • 3 cloves garlic, Crushed
  • 1/2 red onion. finely chopped
